    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.

    Heat the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar is dissolved and the mixture is hot but not boiling.

    Add Vanilla and Gelatin

    Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving glasses or molds. Refrigerate for at least 4 hours or until set.

Berry Sauce

    Prepare the Berry Sauce

    In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, stirring gently until the berries break down and the sauce thickens, about 10-15 minutes.

    Cool the Sauce

    Remove the saucepan from heat and let the berry sauce cool to room temperature. You can strain it if you prefer a smooth sauce.

    Serve

    Once the panna cotta has set, top it with the berry sauce just before serving.
