In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until evenly mixed.

In another bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until well combined.

Combine Mixtures
Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixtures together using a spatula until just combined. Be careful not to overmix; a few lumps are okay.
Cooking the Pancakes

Heat the Griddle
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

Cook the Pancakes
Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook the other side until golden brown, another 2 minutes.
Serving

Serve the pancakes warm with maple syrup drizzled on top. Add fresh fruit if desired.
