Prepare the Vegetables
Wash and dice the potatoes and seasonal vegetables into bite-sized pieces. Set aside.

Prepare the Cod
Rinse the cod fillets under cold water and pat them dry with paper towels. Season with salt and pepper to taste.

Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the seasonal vegetables and sauté for about 5-7 minutes or until just tender. Season with salt and pepper.

Prepare the Cod Mixture
In the same skillet, push the vegetables to the side and add the cod fillets. Pour the white wine over the cod, then add the diced tomatoes, capers, and half of the chopped basil. Cook for about 8-10 minutes, spooning the sauce over the fish occasionally, until the cod is opaque and flakes easily with a fork.

Finish the Dish
Once the cod is cooked, sprinkle the remaining basil and grated Parmesan cheese over the top. Cover and let it sit for an additional 2-3 minutes until the cheese melts.

Serve
On a plate, serve a portion of the sautéed vegetables and potatoes, topped with a cod fillet and the Mediterranean sauce. Enjoy your Mediterranean Cod!
