Mix the Marinade
In a large mixing bowl, combine 1 cup of olive oil, 1 cup of lemon juice, 4 tablespoons of minced garlic, 2 teaspoons of dried oregano, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until well blended.

Marinate the Chicken
Add the 4 pieces of chicken breasts to the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 1 hour, or up to 8 hours for more flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).

Preparing Seasonal Vegetables

Toss the Vegetables
In a mixing bowl, add 2 cups of sliced zucchini, 2 cups of chopped bell peppers, and 2 cups of trimmed asparagus. Drizzle with 2 tablespoons of olive oil, and season with 1 teaspoon of salt and 1 teaspoon of black pepper. Toss until evenly coated.

Plate and Serve
Once the chicken is cooked through and the vegetables are tender, remove them from the grill. Let the chicken rest for a few minutes before slicing. Serve the grilled chicken alongside the seasonal vegetables.
