For the Beer Battered Fish

Prepare the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually pour in the beer while whisking until the batter is smooth and free of lumps.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing excess batter to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.

Mix the Ingredients
In a small bowl, combine the mayonnaise, malt vinegar, minced garlic, and salt. Mix well until fully combined and smooth.
For the Sriracha Ketchup

Combine Ketchup and Sriracha
In a small bowl, mix together the ketchup and sriracha sauce until well combined.
