Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F) to ensure it's hot enough for baking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth. Stir occasionally to combine.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is pale and fluffy.

  4. 4

    Combine Mixtures

Once the chocolate and butter are melted and slightly cooled, pour them into the egg mixture. Stir gently to combine.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture. Add the vanilla extract. Fold everything together until just combined; do not overmix.

  6. 6

    Prepare Ramekins

Grease four ramekins with butter and dust them with flour to prevent sticking. Tap out excess flour.

  7. 7

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

  8. 8

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  9. 9

    Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
