Chicken Preparation

    Prepare the Chicken

    Season the chicken breasts on both sides with salt and black pepper.

    Cook the Chicken

    In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Marsala Sauce Preparation

    Make the Marsala Sauce

    In the same skillet, add the remaining butter and sliced mushrooms. Sauté for 3-4 minutes until the mushrooms are browned.

    Add Liquid

    Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 5 minutes until slightly thickened.

    Combine with Chicken

    Return the chicken to the skillet, allowing it to soak in the sauce for a couple of minutes before serving.

Piccata Sauce Preparation

    Make the Piccata Sauce

    In the same skillet, melt 1 tablespoon of butter and add lemon juice and capers.

    Add Liquid

    Pour in the chicken broth, scraping up any browned bits. Simmer for about 5 minutes until the sauce is slightly reduced.

    Combine with Chicken

    Return the chicken to the skillet to coat in the sauce. Garnish with fresh parsley before serving.

    Prepare the Potatoes

    Boil diced potatoes in salted water for about 10-15 minutes until tender. Drain and set aside.

    Cook the Green Beans

    In a separate pot, steam the green beans for about 5-7 minutes until bright green and tender-crisp.
