Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 325°F (163°C).

  2. 2

    Mix the Crust Ingredients

In a medium bowl, combine graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until the crumbs are evenly coated.

  3. 3

Press the Crust into the Pan

Press the crumb mixture firmly into the bottom of a 9-inch (23 cm) springform pan. Use the bottom of a glass to help pack it tightly.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for about 10 minutes, then remove it and let it cool while you prepare the filling.

Filling Preparation

  1. 5

    Beat the Cream Cheese

In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 6

    Add Sugar and Sour Cream

Gradually add granulated sugar and beat until well combined. Then, mix in the sour cream and vanilla extract.

  3. 7

    Incorporate Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

  4. 8

    Add Flour

Gently fold in the all-purpose flour until just combined.

  5. 9

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

  6. 10

    Bake the Cheesecake

Bake the cheesecake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.

  7. 11

    Cool and Chill

Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours, preferably overnight.
