Blackened Shrimp

    In a bowl, toss the shrimp with olive oil and Cajun seasoning until evenly coated.

    Heat a skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for 2-3 minutes on each side until blackened and cooked through. Remove from heat and drizzle with lime juice.

Cabbage Slaw

    In a mixing bowl, combine shredded cabbage, shredded carrot, chopped cilantro, lime juice, salt, and black pepper. Toss until well mixed and set aside to marinate for at least 10 minutes.

Mango Pico de Gallo

    In a bowl, combine diced mango, diced tomato, finely chopped red onion, chopped jalapeño, lime juice, and salt. Mix well and let it sit for 10 minutes to meld the flavors.

Yum Yum Sauce

    In a small bowl, whisk together mayonnaise, sriracha, sugar, garlic powder, and lemon juice until smooth. Adjust seasoning to taste.

Tacos Assembly

    Warm the corn tortillas in a skillet or microwave. Place a layer of cabbage slaw on each tortilla, add the blackened shrimp, top with mango pico de gallo, and drizzle with yum yum sauce. Serve immediately.
