Bison Bolognese

    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft and translucent.

    Add Garlic

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Bison

    Add the ground bison to the skillet, breaking it up with a spoon. Cook until browned, about 5-8 minutes.

    Deglaze with Wine

    Pour in the red wine and scrape any browned bits from the bottom of the skillet. Let it simmer for about 2-3 minutes until slightly reduced.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer, then reduce the heat to low and let it cook for 30-40 minutes, stirring occasionally.

    Finish with Basil

    Once the sauce is thickened and flavors are melded, stir in the chopped fresh basil. Remove from heat and set aside.

    Blend Ingredients

    In a mixing bowl, combine the ricotta cheese, heavy cream, salt, and black pepper.

    Whip Until Smooth

    Using a hand mixer or a whisk, whip the mixture until it is smooth and creamy. Adjust seasoning to taste.

Fresh Pasta

    Make the Dough

    On a clean surface, form a mound with the flour and create a well in the center. Add the eggs and salt into the well. Using a fork, slowly incorporate the flour into the eggs until a dough forms.

    Knead the Dough

    Knead the dough for about 8-10 minutes until it is smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll Out the Pasta

    After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until desired thickness is reached.

    Cut and Cook the Pasta

    Cut the rolled-out dough into your preferred pasta shape. Boil in salted water for 2-3 minutes until al dente. Drain and set aside.

Crostini

    Prepare Baguette

    Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices.

    Toast the Slices

    Brush each slice with olive oil and sprinkle with salt. Arrange on a baking sheet and toast in the oven for about 8-10 minutes until golden brown.
