    Prepare the Dates

    Preheat your oven to 200°C (400°F). Slice each Medjool date lengthwise on one side without cutting all the way through to create an opening. Remove the pit if necessary.

    Make the Filling

    In a mixing bowl, combine the Gorgonzola cheese and cream cheese until well blended. You can use a fork or a hand mixer for a smooth consistency.

Assembly and Cooking

    Stuff the Dates

    Using a small spoon or a piping bag, fill each date with the Gorgonzola cream cheese mixture. Be generous with the filling, but do not overstuff.

    Wrap with Bacon

    Cut each slice of bacon in half. Wrap one half around each stuffed date and secure it with a toothpick. Ensure the bacon covers the opening of the date to keep the filling inside.

    Bake the Dates

    Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the dates are heated through.

    Once out of the oven, drizzle the balsamic glaze over the bacon-wrapped dates and sprinkle with finely chopped fresh parsley for a burst of color and flavor.
