Roasting the Vegetables
Preheat your oven to 425°F (220°C). Chop all vegetables into bite-sized pieces and place them in a large mixing bowl.

Drizzle with olive oil and season with salt, pepper, and any desired herbs (e.g., thyme, rosemary). Toss to coat evenly.

Spread the vegetables in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized, stirring halfway through.

Pickling (Optional)
If you wish to add pickled vegetables, thinly slice additional cucumbers, carrots, or radishes.

In a saucepan, combine 1 cup of vinegar, 1 cup of water, 2 tablespoons of sugar, and 1 tablespoon of salt. Bring to a simmer until dissolved.

Pour the hot pickling liquid over the sliced vegetables in a jar and let them cool before sealing. Refrigerate for at least 1 hour before serving.

Arrange the roasted vegetables on a platter, artistically combining colors and shapes. Garnish with fresh herbs if desired.
