Prepare the Ingredients
Slice the onion, red bell pepper, and garlic. Set aside.

Sear the Chorizos
In a large skillet or braising pan, heat the olive oil over medium heat. Add the chorizos and sear them on all sides until browned, about 5-7 minutes.

Sauté the Vegetables
Remove the chorizos from the pan and set them aside. In the same pan, add the sliced onion, red bell pepper, and garlic. Sauté until the vegetables are soft, about 5-6 minutes.

Cover the pan and let the chorizos braise on low heat for about 30-35 minutes, or until they are plump and tender.
