    Prepare the Steak

    Season the petite tenderloin with salt and black pepper. In a skillet over medium-high heat, add olive oil and sear the steak for about 3-4 minutes on each side for medium-rare, or to your preferred doneness. Remove from heat and let it rest for 5 minutes.

    Cook the Bacon

    In the same skillet, add the bacon slices and cook until crispy. Remove and place on paper towels to drain excess fat, then chop into small pieces.

    Prepare the Salad

    While the steak is resting, cut the iceberg lettuce into quarters and place each wedge on a plate. Thinly slice the red onion and sprinkle it over the lettuce. Halve the cherry tomatoes and add them on top.

    Assemble the Wedge

    Slice the rested steak into bite-sized pieces and place them on top of the lettuce wedges. Sprinkle with chopped bacon and crumbled gorgonzola cheese.

    Dress the Salad

    Drizzle blue cheese dressing over each wedge before serving.
