    Prepare the Mashed Potatoes

    Peel the potatoes, cut them into quarters, and boil in salted water until tender, about 15-20 minutes. Drain and mash with a tablespoon of olive oil, salt, and pepper to taste.

    Cook the Pork Chop

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the pork chop with salt and pepper, then sear it in the skillet for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

    Make the Cherry Pepper Sauce

    In the same skillet, add garlic and sauté until fragrant. Add the cherry peppers and cook for 2-3 minutes. Pour in the chicken broth and return the pork chop to the skillet. Simmer for about 10 minutes until the pork is cooked through and the sauce thickens.

    Steam the Broccolini

    While the pork is simmering, steam the broccolini until tender, about 5 minutes. Drizzle with a little olive oil and season with salt and pepper.
