    Prepare the Salmon

    Season the salmon fillets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Place the salmon fillets skin-side down and cook for about 4-5 minutes. Flip and cook for an additional 3-4 minutes until cooked through.

    Make the Sauce

    In a saucepan, combine shallots and white wine. Bring to a simmer and reduce until almost dry. Add heavy cream, simmer for 2-3 minutes, then whisk in the cold butter cubes until melted. Stir in fresh basil and season with salt and pepper.

Tomato Caper Relish

    Prepare the Relish

    In a bowl, combine cherry tomatoes, capers, red onion, olive oil, lemon juice, salt, and pepper. Toss gently and let it sit for 10 minutes to allow flavors to meld.

Goat Cheese Mashed Potatoes

    Boil the cubed potatoes in salted water until tender. Drain and return to the pot. Add goat cheese, butter, heavy cream, salt, and pepper. Mash until smooth and creamy.
