    In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add the ground beef and ground pork to the pot. Cook, breaking it apart with a spoon, until browned, about 8-10 minutes.

    Stir in the minced garlic and cook for 1 minute. Pour in the Barolo wine and let it simmer until reduced by half, about 10 minutes.

    Add the crushed tomatoes, milk, salt, and pepper to the pot. Stir well to combine, then bring to a gentle simmer.

    Reduce the heat to low and let the sauce simmer uncovered for at least 1 hour, stirring occasionally.
