Prepare the Chicken
In a large bowl, combine buttermilk, garlic powder, salt, and black pepper. Add chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Make the Slaw
In a separate bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, and sugar. Mix well and refrigerate until serving.

Prepare the Spicy Coating
In a shallow dish, mix flour, cayenne pepper, paprika, and a pinch of salt. Remove chicken from the buttermilk and dredge each piece in the flour mixture, pressing it in to ensure good coverage.

Fry the Chicken
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry each piece of chicken for about 8-10 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each hamburger bun, place a piece of fried chicken, a generous scoop of slaw, a few slices of sweet pickles, and a drizzle of aioli. Top with the other half of the bun.
