    Sauté the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Simmer the Soup

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Baguette

    While the soup simmers, preheat the oven to 350°F (175°C). Place the sliced baguette on a baking sheet and toast in the oven for about 10 minutes until lightly golden.

    Remove bay leaves from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle generously with Gruyère cheese.
