Prepare the Fries
Peel the potatoes and cut them into thick strips. Soak the potato strips in cold water for at least 30 minutes to release excess starch, then drain and pat dry.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer (or sparkling water) until the batter is smooth.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Serve
Arrange the fish and fries on a plate, serve with coleslaw and tartar sauce on the side. Enjoy your fish and chips!
