    Prepare the Mashed Potatoes

    Boil the potatoes in salted water until tender. Drain and return to the pot. Add butter, salt, and mash until smooth. Set aside and keep warm.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the filet for 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

    Make the Beurre Marchand de Vin

    In the same skillet, add shallots and cook until translucent. Pour in red wine and simmer until reduced by half. Remove from heat and whisk in butter until emulsified.

    Plate the Dish

    On a plate, place a generous serving of mashed potatoes, top with the filet mignon, and drizzle the beurre marchand de vin over the top. Serve immediately.
