Pineapple Fried Rice

Gather all the ingredients and chop the vegetables and protein into bite-sized pieces.

Prepare the Ingredients

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add your choice of protein and cook until browned and cooked through. Remove from skillet and set aside.

Cook the Protein

In the same skillet, add the remaining tablespoon of oil. Add minced garlic and chopped onion, sautéing until fragrant. Then, add bell pepper, carrot, and peas, cooking until tender.

Stir-Fry the Vegetables

Stir in the cooked jasmine rice and pineapple chunks, mixing everything together. Cook for about 2 minutes, allowing the rice to heat through.
