    Prepare the Broth

    In a saucepan, heat the vegetable broth over medium heat until it's simmering. Keep it warm on the stove throughout the cooking process.

    Sauté the Vegetables

    In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes.

    Cook the Mushrooms

    Add the wild mushrooms to the skillet and sauté for 5-7 minutes until they are browned and tender.

Cooking the Risotto

    Toast the Rice

    Add the Arborio rice to the skillet, stirring to coat it with the butter and mix with the onions and mushrooms. Cook for 1-2 minutes until the rice is slightly translucent.

    Add the Broth Gradually

    Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.

    Finish with Cheese and Herbs

    Once the risotto has reached the desired consistency, remove from heat and stir in the grated Parmesan cheese, chopped thyme, and parsley. Drizzle with truffle oil and stir to combine.

    Serve the wild mushroom risotto hot, garnished with additional Parmesan and a sprinkle of fresh herbs if desired.
