Preparation of Simple Syrup

Making Earl Grey Simple Syrup
In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Add 2 tablespoons of Earl Grey tea leaves. Bring to a simmer over medium heat, stirring until the sugar has dissolved. Remove from heat and let the tea steep for 10 minutes. Strain the syrup into a jar and let it cool.

In a cocktail shaker filled with ice, combine 2 oz of toasted coconut aquavit and 1 oz of the cooled Earl Grey simple syrup. Shake well for about 15 seconds until the mixture is chilled.

Adding Creams
Strain the mixture into a chilled glass, then gently float 1 oz of lime cream and 1 oz of orange cream on top by pouring it over the back of a spoon.

Garnish the drink with 1 tablespoon of toasted coconut flakes and a fresh lime wedge on the rim of the glass.
