Preparing the Bruschetta Base

Slice the Baguette
Preheat the oven to 400°F (200°C). Slice the French baguette into 1/2 inch thick slices.

Brush with Olive Oil
Place the sliced baguette on a baking sheet. Brush each slice lightly with extra-virgin olive oil.

Toast the Bread
Toast in the preheated oven for about 5-7 minutes, until the bread is golden brown. Remove from oven and let cool slightly.

Rub with Garlic
Cut the garlic clove in half and rub the cut side onto each toasted slice of bread for added flavor.
Making the Tomato Mixture

Chop the Tomatoes
Dice the vine-ripened tomatoes into small pieces and place them in a mixing bowl.

Prepare the Basil
Chop the fresh basil leaves and add them to the bowl with the tomatoes.

Add Cheese and Seasoning
Grate the pecorino cheese and add it to the tomato and basil mixture. Drizzle with balsamic vinegar, and season with salt and black pepper. Mix gently to combine.
Assembling the Bruschetta

Top the Toasts
Spoon a generous amount of the tomato mixture onto each toasted baguette slice.

Serve Immediately
Serve the bruschetta immediately while the bread is still warm and enjoy!
