Crispy Polenta Directions

    Prepare the Polenta

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.

    Cook the Polenta

    Gradually whisk in 1 cup of polenta, stirring continuously to prevent lumps. Reduce heat to low and cook for about 15-20 minutes until thickened, stirring occasionally.

    Add Cheese and Herbs

    Once the polenta is thick, stir in 1 cup of Parmesan cheese and 1 tbsp of fresh herbs until well combined.

    Set the Polenta

    Spread the polenta into a greased baking dish and allow it to cool and set for at least 30 minutes.

    Cut and Fry

    Once set, cut the polenta into squares or fries. Heat 2 tbsp of olive oil in a skillet over medium-high heat. Fry the polenta pieces until golden brown and crispy on all sides, about 3-4 minutes per side.

    In a medium saucepan, bring 3 cups of water to a boil. Add 1 tsp of salt.

    Slowly whisk in 1 cup of polenta, stirring continuously. Reduce heat to low and cook for about 20-25 minutes until creamy, stirring frequently.

    Add Milk and Butter

    Stir in 1 cup of milk and 2 tbsp of butter, mixing well until smooth and creamy.

    Finish with Cheese and Seasoning

    Remove from heat and stir in 1 cup of Parmesan cheese. Season with black pepper to taste.
