Pasta Preparation

    Make the Pasta Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, beat the eggs gently and gradually incorporate the flour from the edges until a dough forms.

    Knead the Dough

    On a floured surface, knead the dough for about 10 minutes until it is smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

    Roll Out the Pasta

    Divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin, about 1/16 inch thick. Cut into sheets that will fit your baking dish.

    Mix the Cheese Filling

    In a mixing bowl, combine the ricotta cheese, mozzarella cheese, provolone cheese, Parmesan cheese, egg, salt, black pepper, and chopped parsley. Stir until well mixed and creamy.

Mother Sauce Preparation

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add crushed tomatoes, oregano, basil, salt, and black pepper. Simmer for 20 minutes, stirring occasionally.

Assembling and Baking the Lasagna

    Layer the Lasagna

    Preheat your oven to 375°F (190°C). Spread a thin layer of mother sauce on the bottom of a 9x13 inch baking dish. Place a layer of pasta sheets over the sauce, followed by a layer of the cheese filling, and then more sauce. Repeat the layers until all ingredients are used, finishing with a layer of pasta topped with sauce and a sprinkle of extra mozzarella and Parmesan cheese.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly. Let it rest for 10 minutes before slicing.
