Cook the Tagliatelle
In a large pot of salted boiling water, cook the tagliatelle pasta according to the package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

Drain the Pasta
Once cooked, drain the pasta in a colander, reserving about 1 cup of the pasta cooking water for later use.
Mushroom Sauce

Sauté the Onions and Garlic
In a large skillet, heat the olive oil over medium heat. Add the chopped sweet onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.

Season the Sauce
Add the fresh thyme leaves, salt, and black pepper to the skillet. Stir well to combine and let the mixture simmer for 2-3 minutes to allow the flavors to meld.

Combine Pasta and Sauce
Add the drained tagliatelle to the skillet with the mushroom sauce. Toss gently to coat the pasta in the sauce, adding reserved pasta water as necessary to achieve the desired consistency.

Finish with Truffle Oil
Remove the skillet from heat and drizzle the truffle oil over the pasta. Toss again to ensure even distribution.

Plate the tagliatelle wild mushroom and garnish with grated Parmesan cheese before serving.
