    Prepare the Potatoes

    Peel the Russet potatoes and grate them using a box grater or a food processor. Transfer the grated potatoes to a clean kitchen towel and squeeze out as much excess moisture as possible.

    Slice the Onion

    Thinly slice the medium onion and set aside.

    Chop the Chives

    Finely chop the chives and set aside for garnish.

Cooking

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 10-12 minutes, until the onions are soft and caramelized. Remove from the skillet and set aside.

    Cook the Hash Browns

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the grated potatoes, pressing them down to form an even layer. Season with salt and black pepper. Cook for 5-7 minutes until the bottom is golden brown.

    Add the Onions and Cheese

    Flip the hash browns carefully (you can do this in sections if needed). Spread the caramelized onions over the top and sprinkle the smoked Gouda cheese evenly over the hash browns. Cook for an additional 5-7 minutes until the cheese is melted and the other side is golden brown.

    Serve

    Once cooked, remove the hash browns from the skillet. Sprinkle with chopped chives before serving. Enjoy your smoked Gouda hash browns warm!
