Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.
Preparing the Sauce

Sauté the Pancetta and Garlic
In a large skillet, heat olive oil over medium heat. Add the diced pancetta and cook until crispy, about 4-5 minutes. Add the minced garlic and red pepper flakes, stirring frequently for about 1 minute until fragrant.

Cook the Shrimp
Add the peeled and deveined shrimp to the skillet. Cook for about 3-4 minutes until shrimp are pink and opaque.

Deglaze with Wine
Pour in the white wine, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 2-3 minutes until slightly reduced.

Add Peppadew Peppers
Stir in the sliced peppadew peppers and cook for another 2 minutes.

Combine with Pasta
Add the cooked orecchiette to the skillet along with reserved pasta water as needed to create a sauce. Toss to combine and ensure the pasta is well coated.

Finish with Herbs and Cheese
Remove from heat and stir in the chopped basil, grated pecorino cheese, and season with salt and black pepper to taste.
