    Mix the Filling

    In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, chopped spinach, egg, salt, and black pepper. Mix until well combined and set aside.

    Make the Dough

    In a large bowl, mix the all-purpose flour and salt. Create a well in the center and crack the eggs into it. Add olive oil. Gradually mix the flour into the eggs until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin.

    Fill the Ravioli

    Cut the dough sheets into squares. Place a teaspoon of the filling in the center of each square. Moisten the edges with water, fold over to create a triangle shape, and press to seal.

Cooking the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully drop the ravioli into the boiling water and cook for about 3-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Lemon Butter Sauce Preparation

    Prepare the Sauce

    In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in lemon juice and season with salt and black pepper to taste.

    Add the cooked ravioli to the sauce and gently toss to combine. Sprinkle with chopped parsley before serving.
