Prepare the Raspberries
Wash the fresh raspberries thoroughly under cold water and remove any stems or leaves. Set aside.

Make the Sugar Syrup
In a medium saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is fully dissolved. Once dissolved, remove from heat and let it cool.

In a blender or food processor, add the prepared raspberries, the cooled sugar syrup, lemon juice, and vanilla extract. Blend until smooth and well combined.

Strain Mixture (Optional)
If you prefer a smoother sorbetto, strain the raspberry mixture through a fine-mesh sieve into a bowl to remove the seeds. Use a spatula to press the mixture through.

Freeze the Mixture
Pour the raspberry mixture into an ice cream maker and churn according to the manufacturer's instructions until it has a soft-serve consistency. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze for about 2 hours, stirring every 30 minutes until it reaches a sorbetto consistency.
