Preparing the Poached Pears

Poach the Pears
In a medium saucepan, bring water to a gentle simmer. Peel the pears, leaving the stems intact, and add them to the simmering water. Simmer for about 15-20 minutes until tender but not mushy. Remove from water and let cool.
Making the Buttermilk Dressing

Mix the Dressing
In a bowl, whisk together buttermilk, mayonnaise, apple cider vinegar, honey, minced garlic, salt, and black pepper until smooth. Adjust seasoning to taste.
Assembling the Salad

Combine Ingredients
In a large salad bowl, place the spring greens. Slice the cooled poached pears and arrange them on top of the greens. Crumble gorgonzola cheese over the salad and add the dried mission figs.

Dress the Salad
Drizzle the buttermilk dressing over the salad just before serving. Toss gently to combine, or serve dressing on the side.
