Preparing the Walleye

    Prepare the Walleye

    Preheat the grill to medium-high heat. Coat the walleye fillets with olive oil, then season both sides with salt and black pepper.

    Grill the Walleye

    Place the seasoned walleye fillets on the grill. Grill for about 4-5 minutes on each side or until the fish flakes easily with a fork.

    Add Parmesan

    During the last minute of grilling, sprinkle grated Parmesan cheese on top of the fillets and close the grill lid to melt the cheese.

Grilling the Broccolini

    Prepare Broccolini

    While the walleye is grilling, trim the ends of the broccolini and toss with olive oil, salt, and black pepper.

    Grill Broccolini

    Place the seasoned broccolini on the grill. Grill for about 3-4 minutes, turning occasionally, until tender and slightly charred.

Making Lemon Beurre Blanc

    Sauté Shallots

    In a saucepan over medium heat, melt 2 tablespoons of butter. Add the shallots and sauté until translucent, about 2-3 minutes.

    Add Wine and Reduce

    Pour in the white wine and lemon juice. Bring to a simmer and let it reduce by half, about 5-7 minutes.

    Finish the Sauce

    Reduce heat to low, and whisk in the remaining butter a few pieces at a time until fully incorporated. Season with salt and black pepper to taste.
