Preparation
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- 2
Prepare the Chicken
While the pasta cooks, season the chicken breasts with olive oil, salt, and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until cooked through. Remove from the grill and let rest for 5 minutes before slicing.
Cooking the Sauce
- 3
Sauté Garlic and Vegetables
In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and broccolini, cooking for 3-4 minutes until the vegetables start to soften.
- 4
Deglaze with Wine
Pour in the white wine and lemon juice, scraping the bottom of the skillet to release any browned bits. Let the wine simmer for about 5 minutes until it reduces slightly.
- 5
Combine Ingredients
Add the cooked pappardelle pasta to the skillet along with the reserved pasta water. Toss to combine and allow the pasta to soak in the flavors for about 2-3 minutes. Stir in the fresh basil and chives just before serving.
Serving
- 6
Plate and Serve
Slice the grilled chicken breasts and arrange them on top of the pasta. Garnish with additional basil and chives if desired. Serve immediately.
