    Prepare the Ingredients

    Clean and slice the mushrooms. Finely chop the shallots. Rinse the spinach and pat it dry.

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Cooking

    Sear the Salmon

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillets skin side down. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes until the salmon is cooked through. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, reduce the heat to medium. Add 2 tablespoons of butter and let it melt. Add the chopped shallots and sauté for 2 minutes until they are translucent. Then add the sliced mushrooms and cook for another 4-5 minutes until they are golden brown.

    Add Spinach and Sauce

    Add the fresh spinach to the skillet and stir until wilted, about 2 minutes. Pour in the lobster sauce and stir to combine, cooking for an additional minute.

    Combine and Serve

    Return the seared salmon to the skillet to warm through for 1 minute. Serve the salmon topped with the mushroom and spinach mixture, drizzled with additional lobster sauce if desired.
