Preparation of the Base

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, and celery, and sauté until the vegetables are soft and translucent, about 5-7 minutes.

    Add Garlic and Tomato Paste

    Stir in the minced garlic and tomato paste, cooking for an additional 2 minutes until fragrant.

    Add Lobster Shells and Stock

    Add the lobster shells to the pot along with the fish stock, bay leaves, and thyme. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.

Finishing the Bisque

    Strain the Mixture

    After simmering, strain the mixture through a fine sieve into a clean pot, pressing down on the solids to extract as much liquid as possible. Discard the solids.

    Add Flavor Enhancers

    Stir the sherry, brandy, salt, and black pepper into the strained bisque. Bring it back to a gentle simmer.

    Add Cream and Chives

    Finally, stir in the heavy cream and chopped chives. Allow the bisque to simmer for another 5 minutes, then adjust seasoning to taste.

    Ladle the bisque into bowls and garnish with additional chives if desired. Serve hot.
