Dough Preparation

In a small bowl, combine warm water and active dry yeast. Let sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

In a saucepan, combine canned crushed tomatoes, minced garlic, dried oregano, salt, and black pepper.

Simmer Sauce
Bring to a simmer over medium heat, stirring occasionally. Let cook for about 15-20 minutes to thicken slightly.

Preheat Oven
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll or stretch it into a 12-inch circle.

Spread a generous amount of the prepared sauce over the dough, leaving a small border around the edges.

Layer the thinly sliced soppressata and jalapeno evenly over the sauce, then sprinkle with grated pecorino cheese.
