Preparing Oysters

Shucking the Oysters
Carefully shuck the oysters using an oyster knife. Hold the oyster with a towel in one hand to protect your palm. Insert the knife into the hinge of the oyster and twist gently to open it. Slide the knife along the inside of the shell to detach the oyster from the shell, then place the oyster on a serving platter. Discard the top shell.

Combine Ingredients
In a mixing bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir well until all ingredients are thoroughly mixed. Adjust hot sauce to taste and set aside.

Mix the Mignonette
In a small bowl, combine red wine vinegar, minced shallots, and freshly cracked black pepper. Stir to mix and let sit for at least 10 minutes to allow the flavors to meld.
