    Season the Steak

    Take the 8 oz filet mignon and season it generously with salt, black pepper, and garlic powder on both sides. Let it sit at room temperature for about 30 minutes to allow the flavors to penetrate.

Cooking

    Heat the Pan

    In a heavy skillet or cast-iron pan, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.

    Sear the Filet Mignon

    Carefully place the seasoned filet mignon in the hot skillet. Sear it for 4-5 minutes without moving it, until a nice crust forms.

    Flip the Steak

    Using tongs, flip the filet mignon and sear the other side for another 4-5 minutes for medium-rare. Adjust the cooking time according to your preferred doneness.

    If desired, add 1 tablespoon of butter and a sprig of fresh rosemary to the pan during the last minute of cooking. Spoon the melted butter over the steak for added flavor.

Resting

    Remove the filet mignon from the skillet and let it rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.
