    Cook the Fettuccine

    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the fettuccine.

    Grill the Chicken

    Season the chicken breasts with olive oil, salt, and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove from heat and let rest before slicing.

    Prepare the Broccolini

    In a separate pot of boiling water, blanch the broccolini for 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Making the Sauce

    Make the Garlic Cream Sauce

    In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated Pecorino Romano cheese, nutmeg, and salt, mixing until the cheese is melted and the sauce is smooth.

    Combine Pasta and Sauce

    Add the cooked fettuccine to the skillet with the garlic cream sauce. Toss to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

    Divide the fettuccine among plates, top with sliced grilled chicken, and arrange the broccolini on the side. Garnish with additional grated Pecorino Romano cheese and chopped parsley.
