Method

Prepare the Truffle Fries

    Cut the Potatoes

    Wash and peel the russet potatoes, then cut them into thin fries.

    Fry the Potatoes

    In a large pot, heat vegetable oil over medium-high heat. Once hot, add the cut potatoes in batches and fry until golden and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Season the Fries

    Drizzle the hot fries with truffle oil, and season with salt and black pepper to taste. Toss to coat evenly.

Make the Lemon Aioli

    Combine Ingredients

    In a bowl, combine mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper.

    Mix Well

    Whisk all the ingredients together until smooth and creamy. Adjust seasoning if needed and set aside.

Prepare the Walleye Fillets

    Set Up Breading Station

    In three separate bowls, place flour in one, beaten eggs in another, and a mixture of cornmeal, salt, and black pepper in the last.

    Bread the Fillets

    Dredge each walleye fillet in flour, dip in the beaten eggs, and then coat with the cornmeal mixture.

    Fry the Fillets

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the breaded fillets until golden brown and cooked through, about 3-4 minutes per side. Remove and set aside on paper towels.

Assemble the Sliders

    Slice the slider buns in half and lightly toast them if desired.

    Build the Sliders

    Spread a generous amount of lemon aioli on the bottom half of each slider bun. Place a piece of crispy walleye on top, followed by a handful of chiffonade romaine. Top with the other half of the bun.
