Chocolate Ingredients

Method

Preparation of Base

  1. 1

    Combine Milk and Cream

In a medium saucepan, combine the whole milk and heavy cream. Place over medium heat and warm until just hot but not boiling, stirring occasionally.

  2. 2

    Mix Cocoa and Sugar

In a separate bowl, whisk together granulated sugar, unsweetened cocoa powder, and a pinch of salt until well combined.

  3. 3

    Combine Mixtures

Once the milk and cream mixture is hot, gradually whisk in the cocoa-sugar mixture until fully dissolved. Continue to heat for 2-3 more minutes, stirring constantly.

  4. 4

    Add Vanilla

Remove the saucepan from the heat and stir in the vanilla extract.

Chocolate Incorporation

  1. 5

    Melt Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Pour the hot cocoa mixture over the chocolate, allowing it to sit for 2-3 minutes to soften.

  2. 6

    Stir Mixture

Using a whisk or spatula, stir the mixture until the chocolate is fully melted and incorporated into the cocoa base.

Chill and Churn

  1. 7

    Chill Mixture

Cover the bowl with plastic wrap and refrigerate the chocolate gelato mixture for at least 4 hours, or preferably overnight.

  2. 8

    Churn Gelato

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  3. 9

    Freeze Gelato

Transfer the gelato to an airtight container and freeze for an additional 2-4 hours to firm up before serving.
