Method
Blueberry Puree
- 1
Prepare the Blueberry Puree
In a medium saucepan, combine the fresh blueberries and water. Bring to a boil over medium heat and cook for about 5-7 minutes, or until the blueberries have burst and softened.
- 2
Blend the Blueberries
Remove from heat and let cool slightly. Use a blender or immersion blender to puree the mixture until smooth. Strain through a fine mesh sieve if desired to remove skins.
Rosemary Syrup
- 3
Make the Rosemary Syrup
In a saucepan, combine fresh rosemary, granulated sugar, and water. Bring to a boil over medium heat, stirring until the sugar has dissolved.
- 4
Simmer and Cool
Reduce the heat and let the mixture simmer for about 10 minutes. Remove from heat and let it steep for another 30 minutes. Strain to remove the rosemary leaves, and allow to cool.
