Mix in the flour
Once boiling, remove the saucepan from heat and stir in flour until the mixture forms a ball. Let it cool for a few minutes.

Add eggs
Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat the oil
In a deep frying pan, heat vegetable oil to 375°F (190°C).

Pipe the churros
Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch long strips of dough into the hot oil.

Fry the churros
Fry the churros until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

Heat the cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Melt the chocolate
Remove the cream from heat and add the chocolate chips. Stir until completely melted and smooth.

Stir in the vanilla extract for added flavor.
