Milk

Method

Milk

  1. 1

    Use fresh whole milk

Pour 1 liter of pasteurized whole cow's milk from a sealed container into a clean pitcher or bottle. Keep the milk refrigerated at 1–4°C (34–39°F) until serving.

  2. 2

    Shake or stir

If the milk has been sitting, give the container a gentle shake or stir to re-incorporate any cream that has separated. Do not shake vigorously if packaging warns against it.

  3. 3

    Bring to serving temperature (optional)

For cold milk: serve immediately from the refrigerator. For warm milk: pour the amount you plan to drink (about 200–300 ml) into a small saucepan and warm over low heat until it reaches 50–60°C (120–140°F) — about 3–5 minutes — stirring occasionally. Do not boil. Alternatively, microwave in a microwave-safe cup in 15–20 second bursts, stirring between bursts, until warm.

  4. 4

    Storage

Return unused milk to the refrigerator promptly, keeping it sealed and upright. Consume within the use-by date on the package or within 3–5 days of opening. Discard if sour smell, curdling, or off flavors are present.

Optional additions

  1. 5

    Salted or sweetened milk

If desired, add 1/4 tsp salt to 1 liter milk for a subtle savory note, or 1 tsp sugar to sweeten. Stir thoroughly until dissolved. Adjust quantity to taste. If warming the milk, add the salt or sugar before warming so it dissolves evenly.
