Method
Bagel & Spreads
- 1
Toast and spread
Split the plain bagel in half and toast to your desired level (light-medium recommended). Once toasted, set the halves face-up on a plate. Spread 1 tablespoon of light cream cheese evenly on one or both toasted bagel halves, as desired, while still warm so it softens slightly.
Bacon
- 2
Cook the bacon
Place a large skillet over medium heat. If your bacon is very lean and likely to stick, add 1/2 teaspoon neutral oil; otherwise no oil is needed. Lay 2 bacon strips in the cold skillet without overlapping. Cook 3–4 minutes on the first side until edges begin to brown, then flip and cook 2–4 more minutes until crisp-tender or to your desired doneness. Adjust heat to prevent burning. Remove bacon to a paper-towel-lined plate to drain and keep warm.
Eggs & Cheese
- 3
Fry the eggs
In the same skillet (wipe out excess bacon fat if you prefer less grease) or a clean nonstick skillet, heat 1 teaspoon butter or oil over medium-low to medium heat. Crack 2 large eggs into a small bowl one at a time, then gently slide into the pan. Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. For sunny-side-up eggs: cook gently 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, gently flip and cook 15–30 seconds more. Adjust to achieve your preferred yolk doneness.
- 4
Melt the provolone
When the eggs are nearly finished (whites fully set), place one slice of provolone on top of each egg. Cover the skillet with a lid for 20–30 seconds to steam and fully melt the cheese. Alternatively, transfer eggs to the toasted bagel halves and place under a hot broiler for 20–30 seconds to melt the cheese—watch carefully to avoid burning.

Assemble sandwich
Place the two cheese-topped fried eggs onto the cream cheese–spread bagel half. Lay the two cooked bacon strips on top of the eggs. Top with the remaining bagel half. Press gently, slice in half if desired, and serve immediately while warm.
