Combine sugars and water
In a small saucepan, combine the dark brown sugar, granulated sugar and water. Stir gently to wet all the sugar; avoid vigorous stirring to reduce graininess.

Dissolve and simmer
Place the saucepan over medium heat. Warm the mixture, stirring occasionally, until the sugars fully dissolve and the liquid comes to a gentle simmer (about 3–4 minutes).

Reduce to syrup
Lower heat to medium-low and let the mixture simmer gently, uncovered, 4–6 minutes more, stirring once or twice, until it thickens slightly and coats the back of a spoon. Do not let it boil vigorously.

Finish with butter and flavor
Remove the pan from heat. Immediately whisk in the unsalted butter until melted and fully incorporated, then stir in the vanilla extract, lemon juice and a pinch of salt. The lemon brightens flavor and prevents the syrup from tasting flat.

Optional spice
If using, whisk in the ground cinnamon now for a warm note. Taste and adjust: add a tiny extra pinch of salt or a drop more lemon if desired.
