Matcha

Method

Matcha

  1. 1

    Sift matcha

Place 2 teaspoons of matcha powder into a small sieve over a bowl. Gently tap or push the powder through to remove clumps. Sifting ensures a smooth, lump-free latte.

  2. 2

    Heat water

Heat about 60 ml of water until it’s just below boiling (≈80°C / 175°F). If you don't have a thermometer, bring to a boil then let sit 1–2 minutes.

  3. 3

    Whisk matcha

Add the hot water to the sifted matcha in the bowl. Using a bamboo whisk (chasen) or small whisk, briskly whisk in a zigzag (M or W) motion for 15–30 seconds until the matcha is frothy and fully dissolved. If the mixture is too thick, add a little more hot water (a teaspoon at a time) to reach a smooth paste.

Milk

  1. 4

    Heat and sweeten milk

Pour 1 cup of your chosen milk into a small saucepan and warm over medium-low heat until hot but not boiling (steaming, about 65–70°C / 150–160°F). Stir in 1 teaspoon sweetener if using, dissolving fully. Alternatively, heat milk in a microwave in 30-second bursts until hot.

  2. 5

    Froth milk

Froth the hot milk using a milk frother, handheld whisk, or by shaking vigorously in a tightly sealed jar for 20–30 seconds to create microfoam. For iced matcha latte, froth cold milk or skip frothing.

  3. 6

    Combine

Pour the whisked matcha concentrate into a mug (or a glass with ice for an iced latte). Slowly pour the hot frothed milk over the matcha, holding back foam with a spoon and then spooning foam on top. Stir gently to combine, or leave layered if you prefer a visual contrast.

Serve & Finish

  1. 7

    Adjust and garnish

Taste and adjust sweetness if needed, adding more sweetener to taste. Optionally dust a tiny pinch of matcha on top for garnish. Serve immediately.

  2. 8

    Iced variation

To make an iced matcha latte: fill a glass with ice, whisk matcha with 30–40 ml hot water to dissolve, pour matcha over ice, then add 1 cup cold milk and stir. Add sweetener to taste.

  3. 9

    Cleaning

Rinse the whisk and bowl promptly after use to avoid staining. If using a bamboo whisk, rinse with warm water and let air dry upright.
