Mojo Roasted Pork (make ahead)

Prepare marinade
In a bowl whisk together orange juice, lime juice, minced garlic, olive oil, cumin, oregano, salt and pepper to make the mojo marinade.

Place the pork shoulder in a large resealable bag or nonreactive container and pour the marinade over. Massage to coat thoroughly. Refrigerate at least 4 hours, preferably overnight.

Preheat oven to 150°C (300°F). Remove pork from marinade, reserve marinade. Place pork in a roasting pan or Dutch oven and roast, uncovered, for 3 to 3 1/2 hours, basting occasionally with reserved marinade, until pork is very tender and internal temperature reaches about 95°C (203°F) or meat pulls apart easily.

Remove pork from oven and let rest 15 minutes. Using two forks, shred the pork into bite-size pieces. Skim fat if desired. You should have about 600 g of shredded pork. Keep warm or refrigerate for up to 3 days (reheat before assembling sandwiches).

If pork was refrigerated, reheat gently in a saucepan with a few tablespoons of reserved mojo marinade or a splash of orange juice over low heat until hot, about 5–8 minutes. Keep warm.

Slice each ciabatta roll horizontally, leaving a hinge if you prefer, and spread 1 tbs mayonnaise on the top half and 1 tbs Dijon mustard on the bottom half of each roll.

Layer on each bottom half: 150 g (about 150 g equals portion) warm shredded mojo pork, 50 g sliced ham (about 2–3 slices depending on thickness), then 2 slices of Swiss cheese. Top with 3 pickle slices per sandwich.

Heat a large skillet or panini press over medium heat. If using a skillet, place sandwiches seam side down in the skillet and press with a heavy pan or spatula (or use a sandwich press). Cook 3–4 minutes per side, or until bread is golden and cheese is melted. If using a press, cook 4–5 minutes until crisp and heated through.

Remove from heat, let rest 1 minute, then slice sandwiches in half on the diagonal and serve immediately.
